Ingredients

  • 1 between squash
  • 2 tbsp. wheat flour (30 g)
  • 125 ml milk
  • ½ onion
  • 2 tbsp. butter (40 g)
  • 1 tbsp. salt (15 g)
  • ½ tbsp. pepper (8 g)
  • 2 tbsp. olive oil (30 ml)
  • 2 tbsp. pecorino cheese (40 g)
  • A spiralizer (you can find it in specialty stores)

Cooking

  1. First, peel the squash, and put it in your spiralizer so you can make it look like spaghetti. Next, set it aside.
  2. Pour the milk into a saucepan with half the onion (previously chopped).
  3. At the same time, melt the butter and wheat flour in a small saucepan. Mix well. 
  4. Next, pour the mixture into the pan with the milk. Stir until thick.
  5. Add salt and pepper, then stir again. Take it off the burner and cover it. Set it aside.
  6. Finally,  pour olive oil on a pan, and fry your squash spaghetti. Next, pour the white sauce over it, and stir it well together.
  7. Serve with a little pecorino cheese, and welcome.

2. Seasonal vegetables: Creamy carrot soup

  • 3 carrots
  • 125 ml milk
  • 1 leek
  • 1/2 onion

  • 500 ml of water

Cooking

  1. First, peel, wash and cut the carrots into medium-sized pieces, and put them in boiling water so that they can be softened.
  2. Next, drain the carrots, and get them in a blender.
  3. Add milk, onion, leek and parsley, and blend until it has a creamy consistency.
  4. Finally, serve in bowls. Season with salt and pepper to taste.

You’ve probably heard of vegetarian nuggets. So, today, we will show you this amazing recipe with pumpkin, which is one of the best of the season vegetables. That way, you can make nuggets for your whole family.

Pumpkins are loaded with vitamins A, B, C and E. In addition, they are rich in beta-carotene and  minerals such as potassium , calcium and magnesium.

Ingredients

  • 400 g pumpkin
  • 125 ml of water
  • 60 g wheat flour
  • 3 tbsp. rasp (45 g)
  • 1/2 tbsp. oregano (8 g)
  • 1/2 tbsp. parsley (8 g)
  • 1 tbsp. basil (15 g)
  • 250 ml of olive oil
  • 1/2 tbsp. salt (8 g)
  • 1/2 tbsp. pepper (8 g)

Cooking

  1. First, peel and cut the pumpkin, and put it in a pan so that it can be boiled and softened.
  2. Next,  use a fork to make a puree out of it.
  3. Next, mix the flour with all the spices and pumpkin puree in a large bowl.
  4. Next, make some balls with the dough that you made and shape them into nuggets. After this, roll them in grater.
  5. Finally, grease a pan with olive oil, and fry your nuggets until golden brown on both sides.
  6. Let them cool and serve.
