Meat is still one of the most sought after foods and most of us are not used to cooking without it. It can sometimes be hard to find good vegetarian recipes. But there are actually a wealth of vegetarian variations of classic meat dishes such as meatballs, burgers and nuggets.

Nuggets are usually made from chicken, which is marinated in a layer of wheat flour or breadcrumbs before being baked or fried. But you can also make nuggets from plant-based ingredients.

1. Vegetarian nuggets with tofu

Most people immediately think of boring, cooked vegetables and salads when they hear the word “vegetarian”. But that does not have to be the case. There are many delicious tasty vegetarian dishes that are at least as satisfying as meat. Here is one of them:

Ingredients

  • 100 g tofu
  • 100 ml of water
  • 4 drops of tabasco sauce
  • 50 ml soy sauce
  • 1 egg
  • 1 tbsp. salt (15 g)
  • 1/2 tbsp. pepper (7 g)
  • 100 g breadcrumbs
  • 3 tbsp. olive oil (45 ml)

Course of action

  1. Mix tofu, tabasco sauce and soy sauce in a bowl. Let the ingredients rest for 15 minutes.
  2. Stir the egg together with salt and pepper in a separate bowl. Then stir the egg together with the above mixture.
  3. Add your breadcrumbs, and knead until you get a firm dough that you can easily shape.
  4. Form the dough into small balls and flatten them out with a finger or fork.
  5. Heat a pan with olive oil, and fry your vegetarian nuggets until golden brown on both sides.

2. Vegetarian nuggets with broccoli

Broccoli is a vegetable that is super healthy. Broccoli contains large amounts of vitamin E and C, and is rich in soluble dietary fiber. The fibers are good for the digestive process and help prevent lifestyle diseases.

Ingredients

  • 2 carrots
  • 2 potatoes
  • 100 g broccoli
  • 1/2 green pepper
  • 1 tbsp. olive oil (15 ml)
  • 1/2 tbsp. salt (7 g)
  • 1/2 tbsp. pepper (7 g)
  • 200 g breadcrumbs
  • 2 eggs
  • 4 tbsp. olive oil (60 ml)

Course of action

  1. Cut out all the vegetables except the peppers. Cook them for 10 to 15 minutes until soft.
  2. Mash them with a fork or a mashed potato until you get a dough.
  3. Then add peppers, salt, paprika and olive oil. Knead well so that the ingredients are mixed.
  4. Let the dough rest in the fridge for approx. 15-20 minutes so that it becomes firm and hardens a little.
  5. Take the dough out of the fridge and shape it into nuggets.
  6. Beat the eggs in a new bowl and sprinkle a handful of breadcrumbs on a plate. Dip each nugget into the egg, then roll them in the breadcrumbs.
  7. Heat the olive oil in a saucepan and fry your vegetarian nuggets. Allow them to cool slightly before serving.

Cauliflower and cheese nuggets

Did you know that you can make vegetarian nuggets from almost any kind of vegetable? Cauliflower is a good example because it gets a really good spongy, chicken-like consistency. But you can easily replace the cauliflower with any other vegetable. This means you can make many different variations of the same recipe.

Vegetarian nuggets with cauliflower and cheese.

Ingredients

  • 150 g cauliflower
  • 50 g parmesan cheese
  • 150 g broccoli
  • 2 tbsp. olive oil (30 ml)
  • 1 tbsp. salt (15 g)
  • 1 tsp. pepper (5 g)

Course of action

  1. Cook cauliflower and broccoli until soft.
  2. Blend them in a blender along with the rest of the ingredients. Add them one by one so that the blender grabs all the pieces.
  3. Form the dough into small balls. Place them on a baking sheet lined with parchment paper.
  4. Bake them in the oven for 20 minutes at 180 degrees until golden brown.
  5. Let them cool before eating them.
