  • 1 tablespoon oregano (15 g)
  • 1 tablespoon salt (15 g)
  • 1/2 cup cream cheese (100 g)
  • 1 cup cream (200 g)
  • 1/2 cup mozzarella cheese (100 g)
  • 2 chopped spring onions

Cooking

  • Start by washing the potatoes thoroughly. Remove all soil as best you can. Remember that potatoes are root vegetables, so this is very important.
  • Fill a medium saucepan with water and a little salt, and add the unpeeled potatoes. Cook over medium heat until soft.
  • Meanwhile, cut the chorizo into small pieces. Pour a little oil into a pan and fry the chorizo when heated.
  • Season your chorizo with garlic, salt and pepper.
  • Then add cream and cream cheese  to the pan with the chorizo. Keep in mind that this is your filling, so make sure it is delicious and flavorful. Adjust the spices in quantities that suit your taste.
  • Now the potatoes should be soft and clear. Take them out of the water and let them cool a bit. Then remove the peel (it should slide off easily).
  • Now make a small hole in the center of each potato  and use a teaspoon to remove the inside.
  • Then you only need to fill each potato with your mixture of chorizo and cheese.
  • Sprinkle mozzarella cheese on top and bake for 5 minutes, or until melted.
